How to Make Majadito: Bolivia's Flavors in Every Bite

Ingredients
5 cups of water1/2 kg shredded dried beef (charque)
1 cup of rice
1/2 cup finely chopped onion
1/2 cup peeled and finely chopped tomato
1 teaspoon of salt
1/2 beef bouillon cube
1/2 cup of oil
Side Ingredients per serving:
1/2 cup of water or broth1/2 frying banana (plantain)
2 slices of cooked and fried yucca
1 fried egg
Let's Get Cooking!
- In a pot, bring the five cups of water to a boil. Add the dried beef and cook until tender. Remove, pound lightly, and shred.
- In the same pot, dissolve the beef bouillon cube. Add the rice and salt, and let it cook on medium heat for about 30 minutes, until fully cooked but not dry.
- In a small pan, heat a quarter cup of oil over high heat. Add the shredded beef and fry until golden brown, then remove from heat.
- In another pan, heat the remaining oil over high heat. Add the onion and let it brown, then add the tomato, water or broth, and salt. Let it cook for about five minutes, then add the fried beef. Mix everything and add it to the pot with the rice. Stir well—it should be moist but not dry.
- Serve hot with a fried egg on top, fried plantain on the side, and a couple of fried yucca slices.
