1 kg beef (rapi)Red food coloring, to taste
Urucú paste, sibarita, or red chili paste
4 cloves garlic, finely chopped
3 carrots, sliced or cut into sticks (optional)
2 grated green bell peppers
3 grated onions
8 grated tomatoes
Garlic, black pepper, and cumin, to taste
Salt and oil, to taste

Season the Beef: Cut the rapi beef into pieces. Season it with salt, pepper, cumin, and garlic to taste, then sear the meat in oil until golden brown. Once done, set it aside.

Prepare the Sofrito: In the same oil, sauté the onion for 5-10 minutes until tender and golden. Add the garlic and let it release its fragrance.

Add Color and Flavor: Mix in the carrots, green bell peppers, grated tomatoes, and red food coloring. Stir continuously to combine the flavors and achieve a vibrant color.

Blend the Flavors: Reintroduce the seared beef to the pot, stirring well to let the meat absorb all the delicious flavors.

Slow Cook with Patience: Cover the pot and simmer on low heat for at least 2 hours. If the mixture begins to dry out, add a bit of hot water.
